As an American, I’ve noticed that most households in the United States tend to disregard leftovers, contributing to our nation’s alarming food waste statistics. However, this issue goes beyond just wasting food. It reminds me of a childhood friend who grew up in poverty, constantly moving from one temporary accommodation to another. Despite her challenging circumstances, she never missed a day of school and maintained excellent grades. Today’s blog post is inspired by her remarkable resilience and determination to defy the odds. As we reminisced, she brought up a short story I had written for her as a parting gift when she and her family were leaving.
